BECHAMEL SAUCE (CHEESE SAUCE WITH CHEDDAR)

A cheesy variation of the basic Bechamel sauce with cheddar

Ingredients
2 Tbsp - Butter
2 Tbsp - Flour (Maida)
2 cups - Warm milk
1 small - Onion (optional)
To taste - Salt
To taste - Pepper
4 Tbsp - Cheddar cheese (grated)
2 tsp - Chilli flakes

Method
Melt butter in a sauce pan over medium heat.
After the butter melts, add the flour and stir continuously on medium flame.
When the flour turns light brown, gradually add the milk and the onion, stirring constantly so that no lumps are formed.
Bring to a boil and add the salt and pepper.
Cook further for a few minutes till it is smooth and slightly thickened.
Add the chilli flakes, the cheddar cheese and remove from fire after a minute.
Finally remove and discard the onion.
