Correction of flavours..Salty

When making soups add the salt towards the end,
As by then the flavour intensifies and the liquid reduces, thus giving us a correct judgement of the quantity of salt needed.
Add raw potatoes, water or small pieces of wheat flour dough,
As they absorb the salt. Do not forget to discard these pieces before serving.
Add some lemon juice or vinegar or sugar,
As the acidity and the sweetness will help to balance the salt.
Add less salt when the recipe calls for other salty ingredients,
As feta cheese, capers, olives, soy sauce or any other sauce are already salted.
