Healthy sweet potato bite {191}

Ingredients
A)
2 pcs - Sweet potatoes (wash very nicely)
To roast - Vegetable oil
To taste - Salt

B)
2 - Potatoes
2 tsp - Butter
150 gms - Paneer
1 cup - Cabbage (finely shredded)
1/2 to 1 - Green chilliy (cut finely)
To taste - Salt
To taste - Black pepper
To drizzle - Balsamic vinegar

C)
1 pc - Capsicum (saute the thin slices for half a minute)
11/2 Tbsp - Feta cheese
6 pcs - Olives (cut into halves)
1/2 pc - Tomatoes (chopped)
Mint leaves (tear into halves)
1/2 pc - Red bell pepper (chopped)
To taste - Sea salt

Method
A)
Boil the sweet potatoes till more than half cooked.
Peel, slice and roast them on the griddle.
Turn them over once or twice and spread the oil on top.
Sprinkle some salt and drizzle lemon juice over it.

B)
Boil the potatoes, remove the skin and mash it.
Heat a pan, put the butter in it.
Add the potatoes and saute for a few minutes.
Turn off the heat and mix the paneer, cabbage, salt, green chillies, black pepper and balsamic vinegar in it.
Divide the mix into six portions, shape each into rounds and flatten them with your palms.

C)
Heat the sweet potato slices and the potato disc just before serving.
Spread the sweet potato slices on a platter.
Put the capsicum slices over it.
Sprinkle the salt and place the potato discs on it.
Finally top it with feta cheese, olives, tomatoes, mint leaves, red bell pepper, little drizzle of balsamic vinegar and sea salt.
