Polenta is a dish of boiled cornmeal.
It is sometimes available as a pre-cooked maize flour in the stores.
Leftover polenta can be served with basil sauce, green salsa or marinara sauce and cheese.
It can be boiled, allowed to cool, solidify and shaped into polenta balls or pattice, which is then baked, fried or grilled.
