Interesting soba noodles with marinated tofu in a nutty sauce.
Ingredients for the Vegetables and noodles
50 gms - Soba noodles (wash in cold water and boil till soft, wash again and drain)
1/2 pc - Avocado (peel, deseed and dice into 1 inch cubes)
15 pcs - Cherry tomatoes
3/4 cup - Tofu (dice into 1 inch cubes)
1Tbsp - Oil
Ingredients for the Sesame nutty sauce
2 Tbsp - Pine nut
10 pcs - Spinach leaves
2 Tbsp - Light soy sauce
1 tsp - Sesame oil
1/2 tsp - Togarashi or Dried red chilli powder
3 tsp - Brown sugar
4 Tbsp - Rice vinegar
1/2 tsp - Vegetables oil
2 Tbsp - Sesame seeds (roasted)
2 pcs - Spring onion with leaves (chop finely)
Method for the Sesame nutty sauce
Blend the pine nuts and spinach leaves.
Add the soy sauce, sesame oil, red chilli powder, sugar, vinegar, half of the vegetable oil and slowly add the rest of the oil to a smooth paste.
Add sesame seeds and spring onion.
To marinade
Pour half of the sesame nutty sauce on the tofu and leave for half an hour.
To Grill
Apply oil to the cherry tomatoes.
Grill the marinated tofu and the cherry tomatoes.
For Garnishing
1 Tbsp - Tofu (crumbled)
1 Tbsp – Spinach leaves (chopped finely)
2 tsp - Red chilli (chopped finely)
Serving
Mix the noodles, avocado, cherry tomatoes, tofu and the other half of sesame nutty sauce and add the remaining sauce of the marination.
Top with tofu, spinach and red chilli.
