Summer Kale and Raisin Salad[145]

A highly nutritive tasty salad
(2 servings)
Ingredients
4 cups - Kale leaves
(Place a colander on top of a vessel
After wash the leaves, cut it very fine and then put it in the colander
Add 1 to 2 teaspoon of olive oil and massage it gently with your hands
Let it rest there for a couple of minutes)
2 cups - Baby arugula leaves
1 pc - Red bell pepper (chop very fine)
1 pc - Carrot (grated)
1 cup - Peeled pomegranate
2 1/2 Tbsp-Pine-nuts
4 tsp - Balsamic vinegar
20 pcs - Dried black raisins [draksh, daakh] (cut into halves)
To taste - Salt
A dash of lemon juice
To drizzle - Extra virgin olive oil
Method
Toss the leaves, red bell pepper and the carrot together.
Now add the raisins,pine-nuts and half of the pomegranate pieces.
Squeeze the other half of the pomegranate pieces into this salad.
Mix well and add the balsamic and salt.
Top it with a dash of lime juice and olive oil.
Enjoy the healthy feeling.
It will stay well as a packed lunch too.
