Ingredients
2 squares - Flat bread (also available as cracker thin pizza crust at Foodhall)
1 box or 30 - Leaves of baby spinach(tear them)
2 pcs - Fresh sweet corn(boil lightly)
25 pcs - Cherry tomatoes(I have used the orange cherry tomatoes)(cut into halves)
1 Tbsp - Extra virgin olive oil
As per taste - salt
1 1/2 cup - Basil pesto sauce as per recipe (if in a hurry can buy from the grocery store)
Ingredients and method for the basil pesto sauce
4 1/2 cup - Basil (strip the leaves from the stems, so as to retain the colour and flavour)
15 tsp- Pine nuts
3 Tbsp - Garlic (chopped finely)
1 1/2 Tbsp - Black pepper (grounded)
1/2 cup - Olive oil
2 tsp or as per taste - Salt
Put 3 cubes of Ice in the blender at medium speed.
Remove this water in a bowl.
Blend the basil, pine nuts, garlic, black pepper gradually adding the olive oil.
Add the salt and little of the ice water, blend it further.
Remove in a bowl.
Use 1 1/2 cup of the sauce and store the remaining sauce for the later use.
Guacamole
Ingredients and method for guacamole
2 pcs - Avocado (ripe) {Vitamin - A, B, C, E, K, Protein}
1 Tbsp - Lemon juice
1 Tbsp - Coriander leaves (chopped)
2 pcs - Green chilies (deseeded and chopped)
2 cloves - Garlic (minced)
2 Tbsp - Onion (minced)
6-8 pcs - Jalapeno (bottled jalapeno available in the grocery stores) (chop into halves)
To taste - Salt
Remove the pit and mash the avocado with fork.
Mix the avocado, lemon juice, coriander leaves, green chilies, garlic, onion, jalapeno and salt.
Keep on mixing with the fork.
Method for assembling the flat bread with guacamole and basil pesto
Cut each flat bread square into 6 smaller squares.
Bake them in a preheated oven at 250 degree celsius for 4 to 5 minutes or till crisp.
Mix the baby spinach, corn, cherry tomatoes, oil and salt in the pesto.
Divide the mix into eight parts.
Place it on each of the twelve pieces of the flat bread.
Divide the guacamole into twelve parts.
Put a dollop of it on each of the twelve pieces of the flat bread.
Serve it.
