JANUARY SALAD
Ingredients
11/2 cup uncooked pearl barley (soak the barley)
1 cup canned corn kernels
500 gms Pumpkin ( deskin and dice into 1.5 cm cubes)
1Tbsp Olive oil
2tsp Cumin seeds (jeera)
2 med oranges (deskin,deseed and remove the white pith)
1/4 cup Pinenuts (toasted)
250 gms Cherries (halved and pitted)
1/4 cup Mint leaves (chopped)
100 gms Baby spinach
1/2 cup Pomegranate seeds
3/4 cup feta cheese (crumble)
To taste Black pepper
Dressing
Ingredients
2 Tbsp lemon juice
2Tbsp orange juice
1/2 cup olive oil
Whisk together.
Method
Cook the barley in boiling water till tender. It may take upto 20-25 minutes. Drain and rinse it with clear running water.
Spread the pumpkin on the baking tray,drizzle with the olive oil and sprinkle the cumin over it.
Bake in a preheated oven at 200 degrees c for 15-20 mins or till tender and the browning of the edges start.
Take a bowl and put the barley, corn, pumpkin, oranges,pinenuts,cherries,mint leaves,spinach, pomegranate,feta and black pepper in it.
Drizzle the dressing over it.
Toss lightly and serve.
