JOWAR BHAKRI WITH PITLA IN A GLASS[53]

An Indian-Maharashtrian Bhakri or Bread eaten with Pitla and Thecha
Needed :shot/small glasses

(Makes 16 pieces)
150 gms - Salted hung curd
Ingredients for the Dough
1 cup - Sorghum flour {Jowar}
2 pcs - Spring onions with leaves (chop finely)
1 1/2 cup - Coriander leaves (chop finely)
20 leaves or 1 cup - Spinach {Palak} (cut finely)
2 pcs - Green chillies (chop finely)
2 tsp - Carom seeds {Ajwain}
1/2 tsp - Salt
2 tsp - Oil
Warm water

Method for the Dough
Mix all the ingredients together and knead into a dough with the warm water.
Divide into 16 balls.
Heat and oil the griddle {tava}.
Rub few drops of oil on the hand, take a dough ball, tap it with the four fingers to flatten and to shape it into a disc.
Carefully remove it and place it on the hot griddle.
When done turn it over and cook the other side.

Ingredients for the Green chilli-garlic paste
1 clove - Garlic
1 pcs - Green chilli

Ingredients for the Pitla
1/4 cup - Gram flour {Besan} {Chickpeas flour} {Bengal gram flour} (roasted on medium heat)
1/4 tsp - Mustard seeds {Rai}
1/4 tsp - Cumin seeds {Jeera}
5 pcs - Curry leaves
1/4 tsp - Carom seeds {Ajwain}
A pinch - Asafoetida {Hing} powder
1/2 pc - Onion (chopped finely)
1/4 cup - Spring onion (chopped finely)
1/2 tsp - Red Chilli powder or chilli flakes
1/4 tsp - Turmeric {Haldi} powder
1/2 tsp - Salt
1/2 pc - Tomato (chopped finely)
1/4 cup - Water
1 tsp - Lemon juice
1/4 tsp - Garam masala
1/2 cup - Water
1/4 cup - Capsicum {Simla mirch} (chopped finely)
2 tsp - Oil

Method for the Green chilli-garlic paste
Pound green chilli and garlic coarsely.

Method for the Pitla
Saute the gram flour.
Heat oil add mustard seeds, cumin seeds and curry leaves.
When they crackle, add the carom seeds, asafoetida, onion, spring onion and green chilli-garlic paste and saute.
Add chilli flakes, turmeric powder and salt.
Then add the gram flour, tomatoes, 1/4 cup water, lemon juice, garam masala and cook for sometime before adding the remaining 1/2 cup water, mix well.
After a few minutes, add the capsicum and cook for a minute.
Remove the pan from the heat.

THECHA
Ingredients
1/2 cup - Peanuts {Mungphali} (roast)
1 tsp - Oil
8-10 pcs - Green chillies
7-8 cloves - Garlic
To taste - Salt or Sea salt
5 small - Onions (chop finely)

Method
Heat oil add the peanuts, green chillies, garlic, salt and onions.
Saute for a few minutes.
Cool and pound the mix coarsely in a mortar and pestle {sil battaa or pounder}

Assembling

Crush the bhakris with your hand.
Put a tablespoon of bhakri in a small glass and then layer it with pitla, salted hung curd and little thecha, followed by one more tablespoon of the bhakri, then pitla and finaly topped with the hung curd.
Repeat this in the other glasses and serve.
