Micro greens are tiny edible plants, that need sunlight, soil and are picked 7 to 14 days after germination, unlike sprouts.
They range from size 1 to 1 1/2 inches long.
At this stage they have the full essence of the mature plant.
They are much more concentrated in nutrition and flavour.
They are tender so easy to digest.
Commonly grown micro greens include radish, sunflower, arugula, beet and mustard.
They are used in soups, sandwiches, salad and as decorative garnishing.
