Sweet potato salad {192}

Ingredients
2 pcs (2 cups) - Sweet potatoes (wash, peel, boil and chop into the cubes)
1 cup - Pomegranate arils (pomegranate seeds)
2 tsp - Balsamic vinegar
2 tsp - Lemon juice
To taste - Salt
2 Tbsp - Pine nuts
15 leaves - Baby spinach (cut finely, dip it in hot water for 2 minutes and then refrigerate the leaves for 5 minutes)
Method
In a bowl, add the sweet potatoes, pomegranate, balsamic vinegar, lemon juice, salt, pine nuts and mix well.
Add the baby spinach and toss it.
Serve it in small glasses.
