Ingredients for the Vegetable Stock
2” - Bottle Gourd {Gheeya or Loki or Doodhi} (peel and chop)
1/4 pc - Cabbage
1/2 pc - Carrot
1/2 pc - Tomato
1/2 pc - Onion
Ingredients for the Onion Sauce
2 medium - Onions (peel and slice)
2 Tbsp - Olive oil
2 Tbsp - Butter
1 tsp - Sugar
1 tsp - Balsamic vinegar
3 cups - Vegetable stock
4 tsp - Corn flour
4 tsp - Cold water
To taste - Salt
To taste - Pepper
Method for the Vegetable Stock
Chop the vegetables into large pieces.
Add 750 ml of water to the vegetables.
Boil and blend.
Method for the Onion Sauce
Make a thin paste by mixing the corn flour and water. Keep it aside.
In another saucepan, heat the oil and butter.
Add the onions and cook for 10 minutes on low heat.
Add the sugar, vinegar, vegetable stock and stir well.
Cook for a further 5 minutes.
Now put the corn flour paste in it.
Boil further for 10 minutes or until the sauce is slightly thickened.
Season with salt and pepper.
